Guama Factory, a wet mill in the village of Guama, has been producing high quality coffee since 1974. This region’s rich volcanic and sandy soils make it ideal for growing coffee.
ALTITUDE: 1,600-1,800m
Flowering usually happens between February and April, with the main harvest season running from October to December. Once harvested, the cherries are carefully sorted by hand to select only the best. They are then pulped and left to ferment overnight, therefore allowing the flavours to develop. After fermentation, the beans are washed, graded, and laid out to dry on raised beds for 8 to 14 days. To protect them from too much sun during the hottest part of the day — and moisture at night — the beans are covered with plastic sheets as they dry.
It is a careful, hands-on process that brings out the best in every batch.
With tasting notes of berry and currants, black tea and dried fruits, brown sugar and molasses, this is a crisp and lively cup of coffee.
